If you're looking for non-Italian food, I really liked this option to break up all the pasta and pizza I was eating. My mother wasn't as big of a fan, so make sure to do your research ahead of time.
Not the best quality food in Verona, but has gluten free options if you happen to be in the market and needed to eat right away.

Great gluten free gelateria in the middle of the city center! You can also find this chain other places in Europe.
Gluten free bakery a bit of a distance from the city center. It was honestly a bit disappointing, but if you're in Verona for awhile, worth checking out.
